All-Purpose Asian Box Meat Marinade
Note: This marinade works well with pork or beef as well.
2 cups fish sauce
2 cups brown sugar
5 cloves garlic, minced
2 shallots, minced
1 teaspoon black pepper
1/2 cup canola oil
Boneless chicken thighs, with skin
1. Using a blender or food processor, mix the fish sauce, brown sugar, garlic, shallots, pepper and oil until the marinade comes together, but isn't quite pureed.
2. Marinate the chicken thighs for 2 to 24 hours, using 11/2 cups of the marinade per pound of chicken. Any extra marinade will last about a week in the refrigerator.
3. Grill chicken over medium heat until cooked through, about 12-15 minutes.
