Dungeness Crab Cakes

Makes 12

1 1/4 lbs. Dungeness crab meat, shelled and cooked

2 cups mayonnaise (homemade or store-bought)

2 tablespoons Old Bay seasoning

1 teaspoon salt

1/4 cup panko breadcrumbs, plus an additional 1 cup for coating

1. Take all ingredients and combine with hands until thoroughly mixed.

2. Weigh out 1 1/2 ounce portions, and form into cakes using a ring mold.

3. Roll to coat in more panko, and brown top and bottom surfaces in a hot saute pan with vegetable oil.

4. Serve with Spicy Paprika Aioli (see recipe below), arugula and shaved fennel.

Spicy Paprika Aioli

2 cups mayonnaise

1/4 cup smoked paprika

1/8 cup lemon juice

1 tablespoon cayenne pepper

1 tablespoon salt

Whisk everything together to combine.
