Turkey Meatloaf Muffins
2 pounds ground turkey or chicken
3 egg whites
1 cup quick-cooking oats
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
2 teaspoons dry mustard
2 teaspoons black pepper
1 teaspoon salt
2 teaspoons ground chipotle powder
2 tablespoons garlic powder or two garlic cloves, minced
1 small onion, finely chopped
2 celery stalks, finely chopped
1. Preheat oven to 375 degrees. Spray standard-sized muffin tin with olive oil or cooking spray.
2. Combine all ingredients in a large bowl and mix well, using a spoon or your hands.
3. Roll mixture into balls the size of racquetballs and place in muffin tins. Bake for 40 minutes.
