Strawberry Spinach Salad
Serves 4-6
Dressing:
1 cup sliced fresh strawberries
1/3 cup balsamic vinegar
3/4 cup olive oil
Fresh thyme or basil, to taste
Salt, pepper
Salad:
10 ounces spinach leaves
Pecans, toasted
1/2 cup goat cheese, crumbled
10-15 strawberries, sliced
1. In a blender, mix the sliced strawberries and balsamic vinegar briefly to liquefy. Add fresh herbs and a big pinch of salt and pepper. Add olive oil; blend until the mixture emulsifies. Taste and adjust seasoning.
2. Place well-washed spinach leaves in a serving bowl or platter. Top with pecans, sliced strawberries and crumbled goat cheese; season with salt and pepper. Serve with the strawberry-balsamic vinaigrette.
