Call it an encore or a delicious "chicken part deux" -- just be aware that if you already have a copy of "A Bird in the Oven," Mindy Fox's award-winning 2010 tome, you already have this book. Fox's new, hot-off-the-press "Perfectly Roasted Chicken" (Kyle Books, $19.95, 176 pages) is simply the paperback imprint.

It may be a repeat, but it's repeating a winner with 20 ways to roast a chicken and dozens of sides, soups and salads by the food editor of La Cucina Italiana magazine. Some of the recipes -- roasted parsnips with za'atar, for example, or asparagus and peas with lemon and tarragon -- are designed to accompany the glorious chicken, roasted with fresh basil-lemon butter or berbere spices. Others showcase the tasty leftovers in, say, a Thai coconut soup or rice salad with mint pesto and peas. Here's just a taste:

CHICKEN & RICE SALAD WITH MINT PESTO & PEAS

Serves 4

1 1/2 cups frozen peas, thawed

4 tablespoons extra-virgin olive oil, divided

1 cup long-grain white rice

2 cups packed mint leaves, plus more for garnish

1 cup fresh basil

1/2 cup freshly grated Parmigiano-Reggiano

1/4 cup pine nuts

1/4 cup fresh lemon juice

1 garlic clove, peeled

1 1/2 cups small to medium shreds roast chicken

1 small cucumber, peeled, seeded, cut into 1/4-inch cubes

3 scallions, trimmed, thinly sliced diagonally

1. Bring a saucepan of well-salted water to a boil. Add peas; cook until tender, 2 minutes. Drain.

2. In a saucepan, bring 1 3/4 cups water, 1 tablespoon oil and 1/2 teaspoon fine sea salt to a boil. Stir in rice. Cover and simmer until tender, about 15 minutes. Fluff with fork and let stand, covered, 5 minutes. Spread on a baking sheet and let cool.

3. In a food processor, puree 1/2 cup peas, mint, basil, cheese, pine nuts, lemon juice, garlic, remaining 3 tablespoons oil and 1/2 teaspoon fine sea salt.

4. In a bowl, toss together the cooked rice, remaining peas, mint pesto, chicken, cucumber and about 2/3 of the scallions. Garnish with remaining scallions and a handful of mint leaves.
